We realize Aux Délices des Bois is a mouthful. But delicacies of the woods - or as Thierry used to say, delicatessens of the woods – just explains our roots.
Thierry grew up in the French countryside, where Sundays were for mushroom forays, the cousins raised ducks and grand-mére churned the week’s milk into butter. When an animal was slaughtered, every part was turned into something wholesome to eat.
Seasonal produce dictated everyday menus. Little kids learned to harvest and preserve foods from forest, farm and sea. Spread out on rustic family tables, local, unadulterated ingredients yielded delicious family feasts. So “Delights of the Woods” announces one of our life’s little thrills – like finding chanterelles on an afternoon hike.
OUR STORY
The ‘80s were exploding with culinary adventures in American kitchens. The fire in our bellies began with a fruitless search for wild mushrooms in New York City. With a roll of quarters and an unreliable Chevette, Thierry and Amy sourced and distributed wild mushrooms. We grew Aux Délices des Bois into a global, vertically integrated one-stop shop for everything truffle, mushroom, and natural harvests.
Thierry remembers his thrifty French grand-mère making the best of the truffle harvest. When faced with truffle scraps and shavings, Thierry followed grand-mère’s lead – folding them into European, high fat butter to preserve for later. Black Truffle Butter was born, and a distribution business segued into a retail and wholesale better butter business. Our compound butters provide comfort flavors, daring flavors, and celebration flavors…something for everyone at the table. Along the way, our products collected industry awards.
Somewhere along the line, we began packaging Duck Fat. Since no self-respecting Frenchman would not have duck fat in the pantry, we figured Americans would follow suit. The result? A trio of culinary fats to cover our nation’s enormous appetite for forthright, natural, time-tested ingredients.
We invite you to do the same. Stock the pantry with jars of luscious animal fats and the freezer with a variety of finishing butters. Voilà! You have the start of a crispy or seared protein, and the finishing touch of melty, 82% fat flavored butter.
