Creamy Truffled Mashed Potatoes
Do-ahead: keep warm in a double boiler on a simmering back burner.
3 lbs. Yukon Gold potatoes, peeled and quartered
Salt
¾ c. milk
Pepper
Cook potatoes in boiling salted water until a fork slips in easily. Drain.
While still steaming hot, mash the potatoes with milk, butter, and seasonings.
