Sweet Potato Latkes
1 ½ pounds sweet potatoes
4 scallions
½ c. flour
2 eggs
½ tsp. cumin
Salt and pepper
2 Tbs. chopped fresh cilantro or parsley
Peel and shred the sweet potatoes. Chop scallions.
Toss with other ingredients to thoroughly coat potatoes. Heat Aux Délices des Bois Duck Fat to sizzling in a skillet.
Form patties, slide into the pan, and cook until crispy and brown, about 2 minutes each side.
