Street Tacos
Hands-on assembling turns an awkward group of guests into fiesta funsters.
8 corn tortillas
1 lb. ground beef
½ c. chopped onion
2 cloves garlic, minced
3 Tbs. chili spice mix
Salt and pepper
Optional toppings, such as grated cheddar, scallions, tomato, avocado, and cilantro
Prep toppings – set them in little bowls and array on your most olé! tablecloth.
In a skillet, cook the ground beef in 1 Tbs. Beef Tallow over medium heat, until browned. Stir in the onion and cook till softened, about 3 minutes. Stir in garlic, cook another 30 seconds. Drain off the fat and stir in the spices.
Holding a tortilla in the palm of your hand, stuff with 2 Tbs. ground beef.
Coat the skillet with Beef Tallow and heat to high. Gently place several folded-over tortillas in the pan, holding the top part down with a fork as the bottom browns and crisps. Reduce heat as necessary to prevent burning. Flip the tacos to cook the other side.
Remove and serve with all your favorite toppings.
