White Beans in Red Wine Shallot Broth

This classic dish simmers its way from pot to table in no time. Accompany meat or fish.

Place the beans, stock, wine, garlic, and bouquet garni in a heavy-bottomed pot. Bring to a boil, then simmer until beans begin to break down, about 20 minutes.   

When the stock is reabsorbed into the beans, remove the bouquet garni. Stir in the Red Wine Shallot Butter and season to taste.
