Shiitake Kale Sauté

Did someone say vegetarian? We call it delicious. 

  • Olive oil

  • 1 lb. kale, cut into roughly 1” pieces

  • 1 lb. shiitake or other firm mushroom, cut into roughly 1” pieces

  • 2 Tbs. minced garlic 

  • Salt and pepper

  • 3 Tbs. Aux Délices des Bois Red Wine Shallot Butter                                                                            

Heat olive oil till spitting hot. Sauté mushrooms in one layer, without stirring, to brown briefly on each side. Remove. 

Sauté kale until barely wilted. Add garlic and mushrooms. Cook 30 seconds. If dry, add 2 Tbs. water, stock, or wine. Season to taste. 

Stir in Red Wine Shallot ButterServe over farro pilaf, rice, or pasta.
